Biryani - a passion
We all succumb to a Biryani Cocorico (chicken), a fragrant dish from India that is excellent and easy to make with our ready-to-use spice sachets. All the aromas of this rice is a real journey for the taste buds. This dish smells divinely good and is always a big hit with guests. A perfect recipe to receive with originality.
How to make Biryani Cocorico?
The choice of the type of rice is essential. We preferably use Indian Basmati rice . As with paella, the rice is cooked directly in the sauce. Therefore, we pay attention to the quality of our Basmati rice. Do not hesitate to buy a premium brand.
The authentic taste of Biryani is obtained by an authentic mixture of more than 14 spices and by the use of our traditional ghee (a clarified butter). This product being rare in European kitchens, we have replaced it with a neutral oil in our recipe.
Don't forget to serve your chicken biryani with a Raita which brings freshness to the plate. This condiment goes very well with this spicy rice, it balances the flavors and its taste is very pleasant.
Detailed recipe
Preparation : 30 mins Cooking : 60 mins
Ingredients :
- Basmati rice (soaked for 30 mins) 500g
- Chicken (with bone) cut into pieces 1kg
- Thinly sliced onions 400g (approx. 6)
- Sliced tomatoes 240 g (approx. 3)
- Water 750g/ml
- Sunflower oil 80g (87ml)
- Yogurt 3/4 cup
- Mint and coriander leaves handful
Step 1 - Heat oil in a deep pot then add the sachet of spices #1.
Step 2 - Add sliced onion, saute until the onions are translucent, and then add the sachet of spices #2.
Step 3 - Add sliced tomatoes and cook until the tomatoes turn into a paste.
Tips: Add 1/2 tea spoon of salt to speed-up the process.
Step 4 - Add the chicken and the yogurt. Mix well and cook until the chicken pieces are 25% done. Then add water and mix well.
Tips: It's time to adjust the seasoning. Taste your sauce, you should feel a slight excess of salt.
Step 5 - Bring the sauce to a boil then add rice, mint, cilantro and mix well.
Step 6 - Cook on medium heat until the rice is 50% done, then close the pot and cook on low heat until the rice is done.
Tips: Remove from heat and cover your Biryani with a dry cloth and close the pot. Leave to rest for 15 minutes.
